Raw Veggie Salad

Writing this recipe is kind-of insulting so here is a video of Martha Stewart showing how to properly julienne vegetables, an essential skill in both life & this recipe.

Also, I’ve found my kid’s spoons to be perfect for mixing vinaigrette’s.  🤷🏻‍♀️

 

Raw Veggie Salad

Ingredients: 

  •  Whatever vegetables you want
  • Any salad base of your choosing; I went with kale, but usually do this with spinach and arugula. 
  • 2 tablespoons olive oil
  • 1 Lemon
  • Salt
  • Dijon mustard

Directions:

  1. Wash your stuff. 
  2. Watch the video
  3. Cut your vegetables, combine with salad base. 
  4. Make your vinaigrette: mix olive oil, juice of 1 lemon, salt & mustard together. * if using kale, do this at least 15-minutes before serving as kale needs to cook in the lemon acid.
